Harvey Nichols appointed Stuart Muir as Head Chef of The Forth Floor Restaurant, Bar & Brasserie situated on the fourth floor of its Edinburgh store.
Stuart Muir who is Scottish born and bred, was previously Executive Chef at the Old Course Hotel Golf Resort and Spa in St. Andrews. He was appointed by Harvey Nichols to cook and manage The Forth Floor Restaurant & Brasserie, and to source and produce the fresh food available in The Foodmarket.
Prior to the Old Course Hotel Golf Resort and Spa, Stuart worked in France and Canada and at The Balmoral Hotel in Edinburgh. He earned a Michelin Star at Knockinaam Lodge, where he was Head Chef for five years.
Stuart Muir is passionate about the ever-growing Scottish restaurant scene and is keen to develop his craft in his native country. He is known for challenging and educating his suppliers, who are almost entirely Scottish. Stuart says: “The most important thing for me is that we work as a team to be the best. In my kitchen, we don’t work for ourselves. Only teamwork will equal success”.
